One of my favorite ways to enjoy leftover turkey from Thanksgiving or anytime we cook a whole turkey is a simple salad. It is so flavorful and juicy since we always season our turkey with sage, rosemary, and thyme before roasting it in the oven. When topped with local microgreens, it is so refreshing! Enjoy!

-pastured turkey, chopped
-2 tablespoons celery, chopped
-2 tablespoons onion, diced
-2 tablespoons avocado mayonnaise
-1 t 2 cups roasted easpoon ground flax
-Sprinkle of nutritional yeast
-Handful of micro greens

1. Add the turkey, celery, onions, and mayonnaise into a bowl and stir with a rubber spatula until well combined.
2. Sprinkle with flax and microgreens.
3. Serve on top of bread or with crackers. Enjoy!
